Recipe Of The Week

“Best Ever” Beef & Bean Chili

Ingredients (serves about 6)

  • 4 strips bacon, chopped

  • 1 œ lb (≈680 g) lean ground beef (90% lean works well)

  • 1 medium yellow onion, diced

  • 1 green bell pepper, diced

  • 3 garlic cloves, minced

  • 2 Tbsp chili powder

  • 1 Tbsp ground cumin

  • 2 tsp smoked paprika (or regular paprika)

  • 1 tsp dried oregano

  • 1 tsp salt (adjust to taste)

  • œ tsp black pepper

  • 1 Tbsp tomato paste

  • 1 (28-oz) can fire-roasted diced tomatoes

  • 1 (15-oz) can black beans, drained & rinsed

  • 1 (15-oz) can red kidney beans, drained & rinsed

  • 2 cups beef broth

  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, sliced green onions

 

Instructions

  1. In a large Dutch oven or heavy pot over medium heat: cook the chopped bacon until crisp. Remove pieces and set aside, leaving the bacon fat in the pot.

  2. Add the diced onion and bell pepper; sauté until softened (about 4-5 minutes). Add garlic and cook for 30 seconds more.

  3. Add ground beef to the pot, breaking it up with a spoon; cook completely through. Drain excess fat if needed.

  4. Stir in the chili powder, cumin, smoked paprika, oregano, salt and pepper; cook until the spices are fragrant (about 1 minute).

  5. Mix in the tomato paste, stirring it into the meat and veggies for about 2 minutes.

  6. Add the diced tomatoes (with juice), drained beans, and beef broth. Stir to combine.

  7. Bring to a gentle boil, then reduce heat and let simmer uncovered for about 30-40 minutes, stirring occasionally, until flavors meld and chili thickens.

  8. Remove from heat. Let it rest 5 minutes before serving. Sprinkle cooked bacon on top and add your choice of toppings.
